Ingredients
- 2 lbs cut-up chicken breast (1 1/2" thick)
- 1 can 8-12 oz Coconut Milk
- 1 tbsp red curry paste
- 5-10 basil leaves
- 1/4 cup fish sauce
- 2 tbsp sugar
- 2 jalapeno peppers (thinly sliced with seeds removed)
- 1 red bell pepper (thinly sliced)
- 1 medium red or spanish onion )thinly sliced)
- 1 cup frozen peas
- Jasmin rice
Instructions
- Boil coconut milk and mix in red curry paste. Mix well. Add sugar, Add chicken, fish sauce, jalapeño peppers and onion. Let cook for 15-20 minutes with lid on at low heat. 5-7 minutes before serving add bell peppers, basil leaves and frozen peas. Serve with Jasmine rice.
